Sparta-The Brick Oven, which opened Saturday, June 19 in Sparta offers a new, healthy and convenient idea for feeding a hungry family on those late evenings coming in from baseball practice.  This restaurant is offering family style, 2-4 person take-out meals. Seating at the restaurant is limited with only three tables available. The Brick Oven is located on Route 181 next to the Route 15 entrance ramp, in Sparta. The restaurant is run by brothers, Dan and Michael Miller, however the rest of the Miller family, parents Michael and Barbara, sister Caryn and brother James have a hand in the business as well. They all help out when time allows.  "The restaurant business is a new venture for me. The idea originated from our own family experience. Both of my parents work full-time and it was hard to come home and cook. We saw the need for a take-out restaurant like this, first hand," explained Dan Miller.  Dinners packages come with a salad, bread, choice of two side dishes, the entree and dessert, all for one price. "Although we offer a wide variety of meals, our specialty is ribs and drunken chicken," stated Miller. Drunken chicken is a whole chicken cooked on top of an open can of beer.  The beer steams the inside of the chicken so it's moist and flavorful. The menu changes daily and it ranges from ribs to roasted chicken, lasagna to roast pork loin. The Millers hope to offer catering sometime in the near future.
