Submitted by Kathleen Monks, Sparta Assistant Superintendent of Curriculum "This was a favorite for my kids when they were young because they could enjoy the turkey without having to eat the mashed potatoes or vegetables. We’ve enjoyed this recipe for about 20 years now." 2 cups leftover turkey, cubed ½ cup dried cranberries ½ cup chopped walnuts 1 pint raspberries 1 head of romaine lettuce Dressing: 2 tablespoons raspberry vinegar 2 tablespoons raspberry jam 1/3 cup light olive oil Tear lettuce into pieces and place in large bowl. Add turkey, cranberries, walnuts, and raspberries. Combine all dressing ingredients and shake. Pour dressing over salad and toss.
